Grilled Salmon is a delicious summer favorite! What to do with leftover salmon? This entrée is perfect for using the left over salmon. So next time you grill up salmon, grill extra to use a few days later for these yummy patties. They are simple to make and can easily become a complete meal with a side of green bean potato salad. At the end of summer, fresh ingredients are easily come by at your local farmers market, take advantage of what is fresh and in season! These yummy salmon patties are paired with the delightfully light and crisp, Great Frogs Vintners ‘Labor of Love’ White.

Ingredients

12–14 ounces cooked salmon (left over grilled works great!)

1 egg, or flax eggs work great too

1/4 cup diced celery, optional

1/2 cup breadcrumbs such as Panko, unseasoned

1 teaspoon salt

1/2 teaspoon garlic powder

2 TBSP each of chopped fresh herbs, chives and dill

a squeeze of lemon juice

1 -2 tsps dijon mustard

olive oil for pan-frying optional, can use non-stick pan and skip the oil

Method

Flake the salmon apart. Mix all ingredients together and form into 3 large or 4 medium patties. Heat olive oil over medium heat, or in a nonstick skillet. Fry the patties for a few minutes on each side until golden brown and crispy. If using non-stick pan w/o oil, cook til lightly browned. Place on a paper towel lined plate and sprinkle with salt.

Serve Patties with sauce, Mayonnaise, diced pickle or capers, lemon juice, salt, pepper, and smoked paprika, a dash of chipotle powder if desired. For burger style, serve with bun, dry slaw and sauce.

This entrée is plated with a green bean and potato salad. A Martha Stewart adaption, using small golden potatoes, sliced cucumber, fresh, steamed green beans, and chives. The dressing is simple, mayonnaise, dijon mustard, fresh squeezed lemon juice, salt, pepper, dill.
