Swiss Steak With Great Frogs Cold Blooded Artisan Series

This recipe takes me back, to a favorite from childhood. Super simple, yummy and even more delicious with Great Frogs, Cold Blooded Artisan Series, red wine. For this entrée, I used round steak, thin cut, which turned out to be a fun twist on this entrée. Rather than one thick cut of meat, it is thinly sliced horizontally. Dusting each slice with flour, salt and pepper then browning. Prepared this way, opens you to several delicious leftover options, on sourdough, or a hoagie bun. Steak, prepared with carrots and baby red potatoes. Use your imagination for other sides.

Ingredients

2 tablespoons flour

1 (2 to 2 1/2 pound) round, thinly cut, horizontally

Kosher salt and freshly ground black pepper

3 tablespoons avocado oil or extra virgin olive oil

1 onion, roughly chopped

1 clove garlic, chopped

2 teaspoons each fresh thyme, and marjoram, or 1/2 teaspoon each dried

2 -15oz cans stewed tomates

Vegetables such as potatoes, carrots, or green beans, optional


Method

dust flour into both sides of the steak. Sprinkle with salt and pepper. Heat 2 tablespoons of oil in shallow pan, (with a cover) to medium high heat. Place the steak in the pan, and cook for 5-10 minutes on each side, just enough to brown the steak.

Remove steak from pan and set aside.

Add onions and garlic to pan with another tablespoon of oil, if needed.

Cook onions and garlic for 3 to 5 minutes, scraping up any steak drippings, mixing them in with the onions.

Return the steak to pan, placing it on top of the onions. Add the stewed tomatoes to the pan. Gently stir in herbs. Cover.

Cover and let simmer for 15 min or until bubbly then place into 325 degree oven for 1 to 1-1/2hrs. You can simply simmer on stove for 1-1/2 hrs. I prefer placing in oven for a richer flavor.

While steak is simmering or in oven, prepare carrots and potatoes. In separate pans, steam until 1/2 tender . When Steak is 20-30 min from done, add in carrots and potatoes, placing them in gently and cover.. Steam carrots and potatoes all the way through if you are keeping them separate from the steak.

Remove Steak from oven, (remaining covered), and let cool 5-10 min before serving.

Notes: partially steaming vegetables ensures they will full tender after placing ion a low temperature oven.

*Garnish with fresh chopped chives or parsley.
