June Wine of the Month: Capital Series Oaked Rose
Summer, a time when moods are light, energy is high, the sun is smiling widest and we're all open to new adventures. High temps, longer days and a steady influx of outdoor invitations demand a lighter wine to match lighter appetites.
You may find yourself increasing your wine consumption this season. This doesn't mean that you need to drink cheap wine or settle for a light, simple white.
We want your palate challenged all year long.
And what better choice than the 2015 Capital Series Rose wine to go with the fresh finds you'll pick up at the farmer's market. Aged in oak, this rose wine has a deep coral color accompanied by lively aromas of baked strawberries and cherries.
It's medium body and dry finish pair well with the tangy bursts of a light Caprese salad appetizer. This salad is something we could eat all year round. For some reason it tastes twenty times better in the summer.

Caprese Salad Ingredients
1 cup balsamic vinegar
1/4 cup honey
3 large tomatoes, cut into 1/2-inch slices
1 (16 ounce package) fresh mozzarella cheese, cut into 1/4-inch slices
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup fresh basil leaves
1/4 cup extra virgin olive oil
2 Simple steps
Step 1
Stir balsamic vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 10 minutes. Set the balsamic reduction aside to cool.
Step 2
Arrange alternate slices of tomato and mozzarella cheese decoratively on a serving platter. Sprinkle with salt and black pepper, spread fresh basil leaves over the salad, and drizzle with olive oil and the balsamic reduction.
