Braised Pork Chops With Apples and Raisins

Pork Chops and apples are a delicious combination and what could be better than pairing it with Great Frogs Vintners Red.

Pork Chops
Gently rinse off Pork Chops and Pat dry with paper towel. Using 1 Tbsp olive oil, rub a little on one each side of chop, salt and pepper. Let rest for 20 min.

Peel apples (if desired) then slice. Set aside. Place raisins in small dish with white wine. Set aside.

Heat oven proof skillet to medium high heat. Add 1 Tbsp olive oil, when hot, carefully place the pork chops into hot skillet. Brown both sides, 2-3 min each side. Remove skillet from heat. Remove Chops from skillet, rest on plate, cover, set aside.

Apples and Raisins

Lower heat to medium and return skillet to heat. Add onion, stir, cook 2-3 min. Next add garlic, simmer until fragrant, 30 seconds or so. Now add raisins soaking in wine, simmer, and reduce slightly. Next add sliced apples, vinegar and rosemary. Let simmer 5 min or so before adding the Chops.

Maneuver the Chops toward the bottom of pan so some of the apples are on top. Sprinkle with a pinch of brown sugar (optional), bring to a simmer. Place in 375 degree oven for 20 min or until Chops are cooked through.

Serve with mashed potatoes and your favorite green veggies or green salad!
