Creamy Garlic Salmon and Salmon with Great Frogs Rosé
The versatility of Great Frogs handcrafted wine varietals are unlimited. Pan seared fresh salmon is finished with a creamy garlic sauce. The addition of fresh shrimp and spinach complete this dish, with a sprinkling of grated Parmesan. Great Frogs Rosé is a lovely companion to salmon, with no exception here. Serve with warm crusty bread from your local baker, rice or pasta.

Ingredients
1 lb salmon
1/2 lb shrimp, deveined, tail removed rinsed
1 cup spinach, or more
4 garlic cloves, pressed or minced
1/2 small onion, chopped
1/2 tsp red crush pepper flakes optional
1/2 cup white wine
1 cup heavy cream
1/4 cup parmesan cheese
Salt and pepper to taste
Oil for searing
Method
Heat small amount oil in a large skillet over medium-high heat.
Season salmon and shrimp with salt and pepper on both sides.
Cook the salmon for 3-4 minutes on each side skin side down.
Remove the salmon from the skillet , remove skin by carefully sliding spatula just above the skin. Reduce heat to med- low, remove some of the excess oil, leaving a bit to sauté onion and garlic.
Add the onions and cook for 2-3 minutes or until translucent.
Stir in the fresh garlic and red crushed pepper, cook for 20 seconds.
Increase the heat to medium-high. Add the white wine and reduce by half. This should take about 3-4 minutes.
Add the heavy cream, parmesan cheese, and season with salt and pepper.
Place the salmon back in the skillet along with the shrimp and spinach.
Cover and simmer for 7-10 minutes or until the shrimp and salmon are completely cooked, and the sauce is thickened.
Serve immediately and enjoy!
Notes: My suggestion is warm crusty bread and a green salad. The meal is plenty rich without pasta or rice
