Italian Stuffed Peppers with Great Frogs Vintners Red
Italian stuffed peppers with a variety of colorful veggies, favorable herbs and Italian sausage, bring delight to your palate and beauty to your eyes. the choice is yours of hot or mild sausage. My family has always teased about my determination in adding color to the plate. I’ve remained focused on this detail mainly because, lets face it looks more appetizing ! Ingredients
6 Large bell peppers, slice off top and remove seeds
1 TBSP olive oil or small amount of water
1 medium onion, diced
3-4 gloves garlic, crushed
8 oz-1lb of Italian sausage
1 medium zucchini diced
1 medium yellow squash
8 oz. fresh mushrooms, diced
1 tsp dried oregano
1 tsp dried basil
red pepper flakes, to taste
1/4 cup chopped fresh parsley
1 14oz can tomato sauce or spaghetti sauce
1 cup cooked rice, brown preferred
salt and pepper to taste
Method
Preheat oven to 350 degrees
Sauté sausage, until sausage is 1/2 way cooked, drain off fat, add onion, garlic. Continue to sauté for 3 min. Add mushrooms, yellow squash, zucchini, and herbs, continue to sauté for 5 min, stirring occasionally. Stir in tomato or spaghetti sauce, then add rice. Remove from heat.
Stuff the peppers
Fill each pepper, stuffing in as much filling as you can. Place in glass baking dish and cover with foil.
Bake for 40 min, remove foil and continue to bake for 10-15 min. remove from oven and serve!
Top with Parmesan or mozzarella if you choose.
Serve with warm crusty bread and fresh green salad.
