Red Pepper Steak Kabobs with Great Frogs Powatinika

Looking for a simple summer meal to grill?

These Red Pepper steak Kabobs are just that!

Sautéed green onions, garlic cloves that are puréed with Red Bell peppers , to make up this lovely Red Pepper sauce.

Marinating the steak and veggetables for a short time gives added flavor.

Served grilled sweet potatoes slices and a glass of Great Frogs Powatinika. Perfect summer meal.

Ingredients

Sirloin Steak, cut into chunks, large enough to skewer

mushrooms

Red & orange Bell Peppers, cut into skewer size pieces

skewers , soak in water if using wood

*Sweet potatoes 2-3 large Sliced and lightly coated with coconut oil

Marinade

2 pinches garlic power

3 TBSP olive oil

Sal & Pepper

Smokey grill seasoning if desired

splash of red wine

Red Pepper sauce

3-5 Green onions, if large slice in 1/2 lengthwise

3-4 whole garlic cloves, peeled

salt & Pepper

1-2- tsp olive oil

1- jar fire roasted red bell peppers, drained

Method

Prepare marinade, divide in 1/2, place into 2 glass bowl or containers. add your veggies to one, your steak to the other. Let rest at room temp while you make the sauce. But first…..

Start Grill, when ready, turn to low heat and add sweet potatoes . Remember to turn every 5-10 min to prevent burning. If they finished grilling at the time of grilling the Kabobs, then place away from flame to stay warm.

To prepare the sauce, sauté garlic cloves and green onions in 1-2 tsp olive oil at lo-med heat until lightly browned and garlic cloves are tender. If you’d like a little heat or added flavor, toss in a small Anaheim or red Chili, seeds removed. when all is tender, puree in blender along with entire jar of fire roasted red bell peppers, minus the juice. Blend until smooth. see aside.

Kabobs

Skewer meat and veggies and place on grill, if desired, turn grill up a bit to lo-med heat, mind your sweet potatoes! Turn every 2 min or so to keep in juices. Grill for 10 min or so until desired doneness.

to plate, spread small amount of sauce on plate and place skewer on top. Add sweet potatoes, pour yourself a class of Great Frog Powaninka and voila!

Notes * If you want more veggies, a green salad is a perfect addition.
