Chili-Lime Chicken Skewers with Black Bean Mango Salad

Looking for a delicious new recipe  to grill for your family or guests? Chili-lime chicken skewers for the answer for me. Marinade your chicken in this flavorful marinade for flavorful juicy chicken. Accompanied by Back bean Mango Corn salad giving you a perfect combination. For this recipe I placed the bean salad on a bed of lettuce for greens and crunch. Paired. With a bottle of chilled Great Frogs Home Rosé completes this entrée. This Rosé is light, crisp with a bit of sweet which pairs beautifully.

Chili-lime Marinade

1 tablespoon chili powder

1 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon cumin

½ cup avocado oil (or olive oil)

½ cup lime juice

2 teaspoons honey

2-4 chicken breasted cut in pieces for skewers.

method

Whisk together the chili powder, salt, pepper, garlic powder, paprika and cumin. Add the honey, oil and lime juice and whisk until well combined. Place in glass dish with chicken pieces for 30 min to over night.

Once marinaded, place on skewers for grilling.

Black Bean Mango Salad

1 can black beans drained

1 ripe mango, diced

1  10oz. Bag frozen corn, thawed

Cherry tomatoes, quartered

1 bell pepper, diced. Red, green or any color

1/2 small red onion

1/2 bunch chopped cilantro.

Method

Blend all ingredients in bowl.

Whisk together dressing ingredients and combine with Bean mixture

Set aside or refrigerate until chicken is off the grill.

Prepare lettuce for salad if using.

Dressing

2 TBSP fresh lime juice

3 TBSP extra virgin olive oil

1/2 salt

1/2 tsp cumin

Notes: Placing bean salad on a bed of chopped romaine or other greens adds greens, crunch and completes salad, is optional however.
