White Fish w/ Black Bean Garlic and Ginger sauce Paired with Great Frogs ‘Share The Love’ Rosé’.
Black bean sauce is made from fermented black beans, Which make them wonderfully deep rich in flavor with a tanginess. Adding garlic and fresh ginger add to the sauces lively flavor. This entree uses white fish, preferably with little or no bones. Black bean sauce is very versatile, working wonderfully with chicken and vegetables alone. Pairing this entrée with Great Frogs Share The Love Rosé is a lovely compliment. A little sweet with the tangy sauce.

Sauce
5 cloves of garlic, chopped
1 Tbsp chopped ginger root
1/2 cup fermented black beans (not soy beans)
1 Tbsp oyster sauce (optional)
1 Tbsp soy sauce or coconut aminos
1 tsp sesame oil
1/3 tsp sugar
Method
Soak beans in warm water for 5 min, drain and rinse well.
Place beans in food processor, pulsing 3-4 times, then add all other ingredients. Pulse 5 times or so, until well blended.
sauce will be enough for 2-3 large pieces of fish.
Fish
2 lbs (approx) white fish
Preheat oven to 375 degrees.
Spread black bean sauce over top of each fillet of fish.
In large stainless steel pan at medium heat, add a little drizzle of oil. When hot, carefully add fish, sauce-side up and cook for 5-7 min. Then remove from stove top, cover and place in oven for 15 min or until fish is cooked through. Remove from heat, let rest for 5 min or so.
Serve with your choice of veggies, salad and or rice.

Notes: you can buy fermented black beans online or at some Asian markets.
